We acquired a few dozen farm fresh eggs yesterday and i boiled 10 of them this morning. I wanted to make some "converted" eggs (formerly "deviled") but 8 out of 10 of then have the yolk exposed or nearly exposed, next to the outside of the egg! One shows a dime-sized yolk exposed! The other two look suspiciously close to the outside as well. Guess i'll make egg salad but what in the world causes that?

My store bo't eggs always have the yolk in the middle of the egg where it belongs!

How do you boil 'em? I put them in a covered pot with cold water then set it to boil. Once it starts boiling I take the pot off the stove and set a timer for 15 minites. Learned that from Chef Pepin on PBS. No overcooked yolks.

I'd guess it's a combination of factors in this article:

Commercial eggs are candled & graded & these sort are not sold. Private sellers SHOULD be doing that too, or warn you & mark down defective eggs. (My Mom worked on a poultry farm at one time : )

Defective? In what way? We had chickens for awhile, never had an egg i would call defective.

There are a bunch of pictures in the link. those without yolks, blood spots, misshapen, funny shells, etc. Usually they're not salable. Sometimes they're a symptom of poor health in the chicken or poor farming techniques. (again, the link lists the causes of each type of defect)

I didn't see my exact problem but it seems the cause is the same for many of the issues. Sure makes me think eggs are disgusting, tho'!!! :( :mrgreen:

I also wonder about the age of the eggs you bought:

It could be, according to this article, that the hen is old or has bronchitis. If you know the farmer & like him or her, you might want to let him know. If this is strictly a business arrangement, a refund or replacement might be appropriate.

Ahhh, there we go. Well, good. That certainly sounds better than the other problems! LOL Since i boiled them to make "converted eggs", it didn't really work. Last night dh made his version of egg salad to go along with dinner - basically a rough chopping of the eggs with a little mayo, i think! I rolled some of them into a sausage patty and fried it for his breakfast - he liked it. I'll probably make a more proper egg salad out of the rest. I'll use the store-bo't eggs for some picnic eggs.

Anna, you are SO good at finding the answers! Why don't my search results come up with that stuff?!
