Olive Oil Cake

Oven 350 30 min
Ingredients

1 cup olive oil (olive oil is a healthy oil)
3/4 cup Coconut flour
3/4 cup erythritol
6 large eggs
2 tsp Baking powder
1 1/4 tsp Baking Soda
2 tsp Vanilla Extract
1/4 tsp salt
Servings: servings
Instructions Combine all dry ingredients in a bowl and set aside.
1. Beat eggs to 3 times the volume in another bowl.
2. Add olive oil, and vanilla extract to eggs and combine.
3. Slowly add the dry ingredients into the wet as you combine.
4. Pour into a greased spring form pan (we used a 9 inch pan).
5. Bake at 350 for 30 minutes (edges will have browned).

Nutrition (per serving)1/8 cake is a serving
Calories: 339
Fat: 33g
Protein: 6.25g
Carbs: 6.25g
Fiber: 3.75
Net Carbs: 2.5g

I have used this recipe for an Orange Cornmeal cake from Martha Stewart that calls for 1/2 cup olive oil, and you can taste it but it's balanced with the orange zest and white wine. This cake is awesome. I only use 1/2 cup sugar and sprinkle the top with some turbinado sugar crystals, it crunches nice.

That sounds a *little* better. A CUP of oil - wow! Coconut flour - EW! And what in the world is erythritol???

I was going to try this but your reaction is making me second think myself. Do you think it's that bad?
