 Post subject: Eyeballing amounts.

We've been enjoying the "regular" bread size loaves lately. I took half the dough and made a perfect loaf this last time! YAY! I just went to use the second half and it is MUCH smaller than the first "half". ??? Does it shrink? Or was my eyeballing amount off that much? sigh I need to get the size right so the oven time is close.

The activity of the leaven can fluctuate with the age of the dough. And, with how long you let it rise and at what temp it rises.

I'm confused why you're getting 2 loaves, not four, tho. Isn't it a 4 loaf batch if you make a "regular" loaf?

The 6 cup recipe only makes 2 regular-sized loaves. You get four 1 pounders.

Yeah - they are "regular" for their recipe but I meant like a "regular" loaf you buy in the store. :) "Regular" is a matter of perspective I suppose.

In our house we (well, 2/3 of us) like crust a lot. So, smaller is better : )

Dh does, too, but he recently broke a tooth - NOT on the crust ;) - and needs to be careful right now. Bigger is better. I prefer the less crusty loaves.
