 Post subject: I've spent the last 3 days simplifying my weekend!

:lol: :lol: :lol: That is SO me!

I have spent 2 days cooking for this weekend and I STILL find myself finishing up this morning. sigh I just hope people EAT it and don't go the "convenient" way of running to the store or going out to eat. That's what my family is used to doing when we get together.

I'm making potato salad this morning and assembling chicken BLT wraps. I was going to make a family-sized salad but I haven't been feeling well and the salad I was going to make has a layer of mayo on top. That mayo just sounds awful right now. But, perhaps I'll just chop up the romaine and iceberg together and they can throw in anything else they prefer... that means I can make the Ranch dressing on the side. Or I can get someone else to make it - bleh. I LOVE Ranch but right now... :oops:

I had to shop, of course, and then we had a thing at school to go to. Time time time people!

Then I'm going to get a bag and fill it with stuff that's taking up room in the fridge that we won't be using this weekend and put it in the fridge at the church. I don't think there should be much in the church fridge. (crossing my fingers) Then I can arrange everything so it can be easily seen and grabbed to encourage eating said food. :mrgreen:

THEN I am going to sit back and let dh mop the kitchen floor. He was in the Navy on a ship so he's good at that, right? :ugeek: :ugeek:

I do hope I feel better so I can enjoy everyone. I hope you all have a marvy spring weekend. :) Praying for those here that are going thru difficult times. Love you guys.

That's a LOT Of work - how many people do you have coming for the weekend?

We'll have 8 of us here - the 4 of us, dd and ds's family. As far as simple=less work - well, uhm, that's just the way I roll!!! I make EVERYthing more difficult than it needs to be. I don't know why I'm like that. Remember when I was doing vegan? LOL It's not "let's eat more plants" - it's combing the net and perusing cookbooks and experimenting with different foods to find the "simplest" and best meals! But never being satisfied and always looking for more! :roll:

I CAN'T STOP MYSELF!! I need intervention!

Bummer. I think I overcooked my potatoes for the potato salad. sigh

I'm afraid it is the MOST fun for me! If I get such a reward (enjoyment) out of it I doubt that I will ever break myself of it! It's a blessing, and a curse. ;)

So, the meatloaf, potato salad and wraps were a definite hit! :) The salads came in handy. I think I am the only one that ate the soup but it was a good go-to for me when I got hungry so I could leave the other stuff for others.

We STILL went out to eat, mainly because it was the day dh goes to the prison ministry and we met him in town as he was on his way. Ds wanted to spend the time with his dad rather than stick around the house. Understandable.

I'm REALLY glad we cleaned out the fridge and had things easily accessible.
