One of my quick and easy go-to breakfasts is a scrambled egg in a tortilla. Besides tofu, or similar processed product, what could i grab-and-go in place of that? In baked goods you can sub flax seed "gel" for the egg/s but i just don't think that would fly in a tortilla!!! |

I'm a "sweet" not savory breakfaster - so I'm not much help. I have toyed with this recipe, but haven't gotten it *perfectly* tweaked to my liking yet. I always bake (russet) or boil (red) extra potatoes and keep 'em chilled in the fridge for snacking or quick hash browns or home fries. I dice potato and sprinkle with salt, pepper, cumin, and oregano and heat them in the skillet until crispy. They are good in a tortilla with some salsa, guacamole. You can add diced onion and peppers, too. |
