Stuffed baked potato Cauliflower Casserole 2 pkgs frozen riced cauliflower cooked in microwave for 5 min. do not add water 1 pkg cream cheese 1 cup cheddar and 1/2 to top with 4 green onions diced 1 cup mushrooms chopped 1 egg whipped 1 cup bacon bits season to taste put the cauliflower in a large bowl mix the cream cheese and 1 cup cheese together and mix into the cauliflower add the whipped egg mix well add seasonings cook the onions and mushrooms in 3 tbsp butter till soft add the bacon bits mix the onions and mushrooms in with the cauliflower mixture. put in an 8x8 pan top with the 1/2 cup cheese bake 35 min at 380 degrees Taste like a stuffed baked potato |
