I thought this was a great idea, I just don't know if my family is ready for a stuffed pumpkin for thanksgiving.

Personally, I just prefer a lot of sides to ANY "main course" for Thanksgiving.

I've made stuffed pumpkin before (I made a different recipe with a rice rather than a bread stuffing). I found the stuffing recipe I made was "just okay" - not great enuf to make again. But the roasted pumpkin shell was just completely flavorless when put beside all the other flavorful dishes for the meal. It really NEEDS some sort of sauce or great seasoning if you make it, IMHO.

It DOES make a very pretty centerpiece, tho : ) (way better than an animal carcass mid table ; )

The stuffing that goes in the pumpkin is my regular stuffing except i use cornbread for the bread. I think i would use individual sized pumpkins or other squash but then i'd have to play with the timing.

She's so right, tho'! Thanksgiving is filled with veggie sides. Just making a healthier version of them is the trick. Will the family be THANKFUL or will they start a revolt?!
