This is what I encourage my clients to do to detox for heavy metals. Use something called Algin or Heavy Metal Detox.
It may take some time to get all the heavy metals out of your system, if you had long term exposure to heavy metals.

What should one expect to "experience" when going through detox? Will there be physical symptoms? My dh is an automechanic and I'm sure full, full, full of heavy metals.

Symptoms you may experience while doing a heavy metal detox, or any detox, for that matter include: headaches, achiness throughout the body/flu like symptoms, runny nose, gums may hurt, kidneys may throb, some experience a metalic taste in their mouth.
If you have IBS or diverticulitis, caution should be used during any cleanse.

When detoxing, are there food that should not be eaten? (and of course, I would think eliminating processed and junk foods would be a given here). And are there foods that should be definitely included? And I would assume that drinking plenty of water is a must???

Typically, when someone is detoxing, they try to keep their diet free of sugar and white flour based foods, limiting the amount of red meat, or eliminating it altogether. Increasing veggies helps increase your complex carb and fiber content, thus helping flush the toxins out of your system. And yes, Laura, you pegged it when you said drinking lots of water is a must. It should always be high priority in our diet, whether we are detoxing or not, as it helps clean the pipes and other eliminating organs. ; )
