Well! I've finally been trying Chloe's recipes. It's from her book "Chloe's Kitchen" and uses "weird" ingredients to my way of thinking. :mrgreen: But my dh did have to ask to make sure there was no "real" cheese in it. And even my Kraft mac & cheese kids liked it. :) Using vegan "butter" and flour with non-dairy milk was a no-brainer. I used a combo of coconut milk and cashew milk for richness. I figured on the nutritional yeast as well. The tomato paste, lemon juice and agave made me wonder but I think that's the secret to this sauce. The sauce had nearly the same consistency as cheese sauce.

I'm not sure I need to make this much "comfort food" tho'. I'm not losing any weight! And dh's complaining about the same thing! :lol:

Yeah - vegan "butter" is usually not a good sign for healthfulness. And coconut & cashews are also full of fat. :geek:

I seldom have good luck with Nutritional Yeast - somehow it always tastes bitter to me. Other people love it. I wonder if I keep getting bad batches, or if I'm a "super taster" for something it has in it? :?

Maybe that's why the agave is in it? And lemon juice? It has an "odd" taste. I can see where it could be considered bitter, I guess. I also tried the Daiya cheese. It was pretty good, too. A LOT better than the fake cheeses I've had before.

There are some pretty good vegan cheese in Europe (if you don't grade too hard ; ), but I haven't found any that I like here (and, yes, we bought the Daiya once).

It's probably just as well - they're not that all good for me!

Yeah - like I tell my DD when she asks how I know things, "Years of experience!"

If you work hard enough, you CAN gain weight on a vegan diet (BTDT)
Oreos are vegan
Twizzlers are too!
And, did I mention Wine?
Coconut Whipped Creme?
Vegan Brownies?
Guacamole & Fried Tortilla Chips?
And, my all time favorite, Peanut Butter & Honey (honey is debatable - some vegans forbid it - but if you use Maple or Agave instead, you still have the same issue - SUGAR!)?

I've lost a bunch of weight on a vegan diet, It DOES work & works well.

But when I do things that *I* know are stupid on it, I can gain, too.

I have a recipe for cheesy sauce that I have tinkered with, it's a take on McDougall's oaty-cheese. In baked macaroni it bubbles like real cheese. I will post both. I don't like nutritional yeast and it's hard to find. I also don't like his recipes much because they use powdered vs real onions, garlic. Oatmeal is a thickener, so I leave off the cornstarch.

McDougall Oatey Cheese
2 cups water
1/2 cup quick cooking oats
1/4 cup nutritional yeast
2 tbsp cornstarch
2 tbsp lemon juice
1/2 tbsp onion powder
1 1/2 tsp salt
4 oz jar diced pimentos

Your supposed to put everything in a blender and then cook the sauce until thickened.

My recipe: 1 cup of water, 1 cup soymilk
1 cup of old fashioned oats, then finely grind in a blender
For the yeast, I sub 1 Herb Ox vegetable bouillon cube
1/4 cup minced onion
2-3 cloves minced garlic
4 oz jar of roasted red peppers ( I love the Spanish piquillo-sweet pepper)
Salt and pepper to taste

After grinding the oatmeal in the blender, I set it aside in a small bowl. Then I add the water and soymilk to the blender with the pimento. I saute the onions and garlic with a little olive oil in a saucepan. Add the oatmeal to coat, like making a white sauce, then add the pimento sauce and the bouillon cube. Dont forget to salt and pepper to taste add all that to 8oz of cooked macaroni, then bake it for 30 min.

I really like that, Briva! I'll have to give it a try. I'd much rather use "real" ingredients that I "understand" than the things like "nutritional yeast". I might have everything to make that right now (maybe not the pimientos, tho).

I keep those roasted peppers on hand when I make my Arroz Sin Pollo, rice without chicken.
