I got lost in the threads below so started a new one.
One of the easiest meals I make is the Easy Pasta and Beans. I know to cook the pasta and throw in some edamame, limas, or any bean (green beans included!). But I forget that what makes it so yummy is the fried onions that also get stirred in at the end. I want to try it with chunks of marinated fried tofu, too. We usually season it with soy sauce and flaxseed oil. Sometimes I throw in other spices like onion and garlic powder or Italian seasoning.
Since I make enough rice for a few meals it's easy to mix in some beans and whatever veggies we have to make some quick tacos. It just takes time to heat up the taco shells. I'm done with everything else before I'm done heating them. Today I mixed the beans and rice and had salsa, onion, lettuce and cilantro in bowls on the table. At the end we always split the leftovers and eat them off the plate.
