It's very common in 100% whole grain recipes. But white recipes almost never have it.

I know the Artisan Bread in 5 folks recommend it. And, I keep it on hand for when I need it.

For some reason I thought that was the bread you guys were talking about, the one from your site that is part whole wheat, part white and it calls for vital wheat gluten. That's the one I'm planning on making. I guess I missed the mark again, lol.

You're right, Lisa! Some of "My" Breads are made with their dough - and I link to their site in my posts.

I think this is the one you're thinking of making, right?

Yes, that's it. I've probably been meaning to make it for a year now. It's pathetic. I've had bad bread making experiences, so that's part of the reason I've been avoiding it.

If you & your family like white bread, you might try their white bread first - it tends to produce great results if you follow their instructions. I've taught a few people how to make it here - it's even easier than their site makes it look! Then move up to the whole wheat once you've gained a little confidence.

This is one that actually turns out better for inexperienced bakers than for accomplished bakers - because accomplished bakers tend to add their own ideas in rather than following the directions ; )

Good advice, I'll try that! Is their white bread recipe only in their book? I haven't bought it yet, but I guess I should.

Their book IS great - but you can certainly get started without the book : )
