Garbanzo bean soup with potatoes and butternut squash (mediterranean style, I add green olives), cornbread and spinach (I like to put it in my soup). Dh adds some brown rice.

Wow - that sounds WONDERFUL!
It's looking like Leftovers here. Leftovers with vegan Ranch dressing, that is ; )
We've got lots of food still on hand from the holidays, and it just seems to multiply itself!
