I tried this one. So far - tasting little bits - it seems creamy, and has many of the same flavors as Ranch. It might be a suitable substitute, but because Ranch (rather like Rice pudding) has a flavor profile that is heavily reliant on the taste of dairy - I don't think anyone will mistake it for the commercial stuff.

I'm also reminded that the "real" stuff has MSG - it might make it a little more convincing if you toss a bit of "Accent" in there (even if it won't make it more healthy ; )

Okay - my verdict is in:
I chilled it down, the flavours blended. I tried it on Celery (a way that I've consumed & enjoyed Ranch in the past)

It's pretty good!

It's not identical - if you're trying to fool a connoisseur - one of those people who can do a blind taste test and tell you which brand they're eating. But, if you put it over the salad of a family who watches TV while they eat dinner and isn't too critical - you just might fool them ; )

I think I'm going to try it as a dip for my baked potato chips, too : )

Oh, and just for the record, I don't have a vita mix or any other fancy blender. I made it in my little el-cheapo food processor, and it worked great. I didn't soak the cashews, either - just gave it a little extra blend time. And, I added the liquid slowly so as to allow the machine to pulverize the nuts well : )

I ran into a discussion on MSG the other day! Did you know it's naturally in foods? I heard a little about it being in Bragg's liquid amino acids but I didn't take the time to go check it all out. It occurs in many fermented foods and several kinds of foods including veggies. :) Of course those are the NATURALLY occurring MSG's.

The "ranch" I made was GREEN! LOL It's from the parsley, I guess. (I had to use dried.)

I'll try "yours" next. :)

Yeah - the parsley gets stirred in after blending - not blended in : )

BTW - I served this to the family this eve without explaining what it was. (I don't think DD has ever tried *real* ranch!)

It was a BIG hit - we all liked it. We used it to dip raw veggies in - carrots, cucumber slices & celery - and it was quite good : )
