I made an interesting cheese spread, dip thing. It's mostly tofu but it has carrots, miso, nutritional yeast (of course), mustard, nutmeg... weird. And we liked it! It's probably the cheesiest tasting fake cheese thing we've ever had. We had it with steamed baby potatoes, Brussels and bread. :)

Boil 1/2 c sliced carrots in 1/2 c water until completely tender.
Place the rest in a blender:
12 oz soft or firm silken tofu
1/4 c nutritional yeast flakes
1/4 t dry mustard
1T mellow white miso
1t freshly squeezed lemon jc
3/4 t salt (or to taste)
a pinch of white pepper
a pinch of nutmeg

Add carrots and blend all together until completely smooth. Heat thru. Serve with dippers - various veggies, bread, maybe even fruit.

I've been wanting to buy Miso, too. It supposedly has tons of health benefits. But I couldn't find it at the store and don't know where to look. Is it sold in regular grocery stores?

I found the miso in the co-op. That's where I buy the "weird" stuff, or more specifically, the hippie foods. ;-) It was in the cold storage in a yogurt type container. I had to ask cuz the only miso I was familiar with was the packets for miso soup and they all had other stuff in them. I think my hummus recipe calls for miso but I never had it so just skipped that part.

I discovered today that about a 1/2 t of nutritional yeast in my oatmeal makes it almost taste like butter. :)

Thanks! I tweek Dr. McDougalls oaty-cheese recipe when making Mac n cheese. It's oats, soymilk and pimentos and a few other ingredients. We like it okay, too. But the new one posted sounds better.
