Dh has agreed to go vegan for 2 weeks and see how his diabetes does with it!!! WOOHOO! Or, maybe I should so WOHO for the season? ;-)

I am searching for budget friendly, diabetic friendly, vegan menu that we will enjoy. I do not want to use the fake meats, tofu (at least not a lot), or soy milk. Fake cheeses, either. I just want to eat real foods that are healthy. Sounds so boring! LOL

I watched the video. He's easy to watch. :) I've read his book on it long ago and do need to refresh. We are surrounded by libraries so, yes, I can get it at a library. :)

Now to go look at the websites. :) There's that plant-based on a budget challenge website, too. I have much to get thru!

Oh good! Glad you could see it. I might do an easier version - just the peppers with veggies in them - not the wheels, tracks, etc, and some dips for New Year's Eve. Gotta start thinkin' vegan. :)

Silly boy. I was TRYING to discuss our new diet with him and he started naming off foods to eat - greens, beans, grains, CORNbeef, .... I almost didn't catch it. LOL
