got me wanting rice. I have always loved rice anyway but had just gotten out of the habit of making it much for some reason. I have started eating rice for breakfast and lunch. At breakfast, I warm up a bowl and sprinkle a couple spoonfuls of shredded cheddar cheese on top and stir it up. At lunch I usually warm up a bowl then add a few sprinkles of soy sauce, garlic and onion powder, and pepper. Yum. I have not been weighing but I can tell my middle is shrinking. My pants are loose and I had to hook my bra one clasp tighter ;) And I can see what looks like a real waist coming back :shock:

My favorite way is to scramble an egg in a little real butter, and when it is almost done add in my rice and cheese and saute it all together a few minutes. I usually only take the time to make eggs on weekends though. We are pro-dairy here and always will be. ;)

I want to get some black beans and try some beans and rice but just haven't had a chance to yet. Dd has been eating a lot of my rice too. She made some rice and bean burritos for dinner one night with pinto beans.

This reminds me. My aunt used to have rice for breakfast every day. She cooked it way down till it was almost like grits. I remember it having a kind of peppery taste. I was the only one in my family that actually liked it. My aunt was very poor and this was a staple breakfast for them. We used to visit them in NC about twice a year and that was the only time I got to eat it! I looked forward to it, lol!
I wish I had asked her how to cook it. She used to serve it with scrambled eggs on the side.

I read recently that the average Chinese person eats 400# of rice a year - more than a pound a day!

I make a batch every few days and keep in the frig. It is not cooked down though, just regular fluffy rice. I've never heard of that but I do love grits! I especially love grits with red eye gravy :)

I tried to learn to like oatmeal, but haven't been able to. I like Cheerios, but dry and not with milk. I like oats in oatmeal cookies, just not oatmeal.

I've been eating Crispix cereal with bananas, strawberries, and blueberries. That's my breakfast every morning since it got so hot. I do add milk.
I can't eat Cheerios anymore because they upset my stomach. I do like them, they just don't like me. :/

Anna, that's a lot of rice!! I like it warm. I could eat it just by itself with nothing on it. My dc do not eat rice so I don't make it often. I eat more rice when they are not home and I vary the toppings.

Carol,
try brown rice one bag or two cooked. Saute mushrooms and onions add rotel add to rice, top with cheese and pop in microwave till cheese melts, I love it that way.
Have you read the starch solution by john mcdougall? If you can get it at the library do read it. It came out about two months ago.

I have some brown rice cooked in the icebox right now.
Will make my brown rice pudding tomorrow after church.
and have the rest with refried beans and corn tortillas for lunch.

Thanks Linda, I will try that. That sounds delicious. I love all those things!

I like it just plain too. Sometimes it is hard to get it in a container and in the frig without wanting to eat it straight out of the pot!

Is brown rice really a whole lot healthier than white? I just can not figure out a way to like brown. The texture is just awful to me.
