I have a very difficult time using up fresh herbs before they go bad. I either forget i have them or i just use a little and the rest go bad. I read about chopping them up ad freezing them in oil, so i tried it. This morning i took out my oily basil cube and made breakfast with it. Niiiiiice.
Next time i buy fresh herbs i think i'll chop them up and freeze them with 1T of evoo. I'll prolly make my own mixes, too, oregano-thyme-basil-garlic goes in so many things i make!
It'll help keep the fridge less cluttered, too!
