 Post subject: Freezing fresh herbs.

I have a very difficult time using up fresh herbs before they go bad. I either forget i have them or i just use a little and the rest go bad. I read about chopping them up ad freezing them in oil, so i tried it. This morning i took out my oily basil cube and made breakfast with it. Niiiiiice. :)

Next time i buy fresh herbs i think i'll chop them up and freeze them with 1T of evoo. I'll prolly make my own mixes, too, oregano-thyme-basil-garlic goes in so many things i make!

It'll help keep the fridge less cluttered, too! :mrgreen:

I've heard that you can also freeze them in ice cube trays filled the rest of the way with water. Then just drop the cube into your soup. But, I've never tried it. Don't have a green thumb.

I suppose so! I froze my oil and herbs in an ice cube tray. :) I only put 1T oil in each and then stuffed as much herbs and onions into it as i could. We shall see!
