Post subject:  Dumb vegetarian question

So, as y'all probably know, I'm a vegetarian cooking for non-vegetarians.

I have in the fridge a Spiral sliced ham that is labelled "Pre-cooked"

In the past, I have slow cooked such hams before serving them. But the weather is kinda hot here . . .

So, I'm wondering, is it acceptable (taste-wise) to just slice/tear some off & microwave it?

Seems like it *should* work - any suggestions?

I hate that pork is so good! :mrgreen:

The "best" meals i eat are like a piece of chicken and broccoli or salmon an asparagus. What is the vegetarian version of simple meals like that?

Simple vegetarian meals? Well, MOST of my meals are simple!

Baked potato (from the microwave) with veggies or rice with veggies should be pretty comparable to what you're talking about. I've been known to just heat the veggies and serve them over the starch : )

I guess you're right! It's hard for a dyed-in-the-wool SAD eater to think that way - even after eating vegan for 18 mos! At least THIS ditwSAD. I think "the protein and the veg". You think "the starch and the veg". :|

I tried to write a sample menu for summer. Out of 7 breakfasts there 4 vegan and 3 are lacto'ovo? vegetarian. Lunches are basically vegan with a little wiggle room for sandwich toppings. Then dinners are more meaty - i LOVE chilled shrimp and corn soup, salmon and asparagus, and turkey lettuce wraps! Then we have the chicken and corn on the cob (or maybe cobb salad), and burgers (can go either veg or beef) with salad.

Sides include potato salad, a beet and avo salad i get addicted to, broc salad, (i'm avoiding pasta).

I have pb pretzels and pepitas down for snacks, and fruit. Those will get old fast so will add those as dh makes suggestions.

I need to have things made ahead for dh's late night snack attacks. Usually they are just "i'm up too late and want to eat again" but sometimes they are sugar lows that need quickly digested carbs. Pb&j works!

I am perusing your blog site, Anna. ;) There's lots on there so i'm trying to stick to the seasonal stuff right now.
