I have to admit - I'm very tempted to try to make them in the prepared filo cups - like these: https://cooktoria.com/recipe/easy-spanakopita-bites/ (tho I might improvise on the filling - I don't know about putting eggs in ) |

It might. Asking about "traditional spanakopita" is like asking about "traditional meatloaf" Traditional is whatever YOUR Yiayia/Grandma did! I don't think of it as very "eggy" but but some authentic versions do have eggs as a binder (not so much that it seems like you're eating Quiche, tho! - and the one I posted looked a bit quiche-ey). This lady's blog is one I love (she's Cypriot, and has excellent English : ) She's traditional, but still creative. https://www.kopiaste.org/?s=spanakopita Note, she has some with eggs. She also has "nistisimi" which means Lenten/Vegan. It is VERY common to see this made as a Lenten food without cheese or eggs! There are lots of varieties that are Lenten. Also, this lady is a famous Greek-American chef. AS for the little cups - lets just make 100 and split them |
