 Post subject: Asparagus egg casserole and Goldenrod Eggs

Asparagus Egg Casserole
Butter 9x 13 pan
1 ½ pounds steamed fresh asparagus
OR 2 cans asparagus, drained
Then, 4 sliced hard cooked eggs
Top with
2 cups white sauce (like this one ... -cups.html )
mixed with
1/8 tsp nutmeg and
1 tsp dried tarragon
Top with ¾ c shredded cheddar
Bake 400 degrees, 15 min, till cheese is bubbly

This is particularly nice served over toast : )

Another nice, old fashioned frugal meal follows. It is one you either love or hate - I loved it as a kid : )

Goldenrod Eggs
Hard cook a few eggs,
Make two cups white sauce
Chop egg whites, and add them to white sauce.
Pour over toast
Sieve hard cooked egg yolks over top of sauce
