How long do fresh eggs last? My neighbor's chickens are producing way more than they can use. This is the 2nd week in a row that they've given me a dozen eggs. (Yay! Praise God!)

I had JUST bought a dozen from the store when he gave me the 1st dozen. How long will they keep?
It looks like we'll be getting eggs for a while as long as his chickens keep laying.

From your neighbor--6-8 weeks in the refrigerator as long as you DO NOT WASH THEM. There is a thin protective coating that will come off with water. The trick to keeping them a long time is don't wash the eggs until you are ready to use them.
The store bought eggs are washed as required by law, so will not last nearly as long.

Ok. I do think they've been washed. They look clean. Way cleaner than the eggs I remember getting from our chickens when we had them.

I get a lot of fresh eggs from my MIL and have never had them go bad and sometimes they're in there for 1-2 months. I've never had store bought ones go bad, either.

Eggs that you buy in the store "expire" according to law in 45 days. That doesn't mean they are bad. Always break an egg into a cup. Look at it, and smell it. If it looks and smells normal, it's fine.

Not only do they keep seemingly forever in the fridge, but they can be broken out of their shell and frozen in a liquid state (I have read this in a book on food preserving - never tried it).

If you need a couple recipes for all those eggs, check the ones I posted for Broccoli or spinach crustless quiches and for Greek Rice pudding : )

Oh, and if you decide to freeze liquid eggs, it's good to know that 1/4 cup equals one extra large egg : )

I'll check out those recipes. The spinach quiche sounds interesting. :)
As for freezing, it's good to know that I have that option. I'm going to give some of the eggs to my mom also.
We are not usually big egg eaters here but I did make deviled eggs with our dinner the other night. I will be adding more eggs to our meals now because free food isn't turned away, lol!

I love making egg salad sandwiches with them and cooking them with shredded corn tortillas, too. We also like hard boiled eggs with a little salt and pepper on top. Sometimes I scramble them with potatoes and put make burritos with them.
