Another way to test them is to put them in a pot/bowl/cup filled with water. If the egg floats to the top it isn't any good.
Sometimes, an omelet is just good! You can fill it with anything, too. My mom makes THE best egg custard. She doesn't have a recipe...I've tried to make it, but it's never as good.

I read somewhere a while back that coating them with oil protects them long, do not ask me why.

I used 5 eggs today when I made potato salad. My ds is so funny. He asked, "Are you using the eggs that Tom gave us??" It was obvious that I was.. I mean, they were right there in the pot cooking. But I said, "No, these are the eggs that I laid myself... what do you think?? Of course they are the eggs Tom gave us." (LOL) SO he said, "Oh, I wasn't sure you could use them." I then had to tell 18 y/o teenaged boy that these eggs are perfectly fine for eating. Why else would we be getting them?? I think he thought they were "different' than store bought ones?? Now, keep in mind, we did have chickens of our own when he was growing up, so it's not like he has no idea where eggs come from. What a strange conversation!
