Post subject:  Baking cookies in a casserole dish

Mom made cookies (beautiful spice cookies) while i was at work and now she's threatening to throw out my casserole pan! She couldn't find a cookie sheet so used that and the cookies from that batch are hard. Isn't there some reason cookie sheets have no edges?

Some cookie sheets (many, in fact) DO have edges. I see no reason that a casserole dish wouldn't work. BUT - there might be other variables that would change the cookie texture: What material it is made out of (glass v. aluminum v. steel for instance); How thick the material is; how reflective the material is (dark v. shiny) etc.

Not to mention, I occasionally have cookies turn out differently from usual on my FAVORITE pan. Maybe I mis-measured an ingredient by a tablespoon or so, or forgot something, or didn't time it carefully enuf.

I see no reason to blame your casserole - but I probably wouldn't use it for cookies next time - just in case it had some blameworthiness.

As for the hard cookies, put them in a closed container (like a tupperware) with a piece of fresh white bread or with a small open container of water (not touching the cookies, just open in the same air). This will add enuf moisture to the air of the container soften them in the course of 2 or 3 days : )

I think the casserole dish would be thicker than the cookie sheet she's used to using.
