This is one of mine:
Confetti Pasta Boil according to package directions 1 pound package of medium pasta shells (or any fork-sized pasta)
While water boils, and pasta cooks, chop (if needed) and dump into a huge bowl a variety of veggies, according to what you have on hand. I always use tomatoes and black olives. Also, according to what you have: carrots, corn, bell peppers, celery, avocado, green olives, capers, canned beans etc. You should have about equal amounts of veggies & pasta when you're done.
When pasta is done, drain it and mix it with the veggies. Then, season GENEROUSLY with: Italian Seasoning/Italian Herbs Garlic salt Toss & season again, to taste.
Serve
(This is a great clean-out-the leftovers menu, too : )
If you don't have Italian herbs, use one or several Italian-type herbs - oregano, basil, rosemary, and/or marjoram, depending on your tastes.
We tend to like this one on Sunday night, after having a big Sunday lunch with friends - and not feeling like making a complicated dinner.

My stand-by is to make a rice cooker pot of either Jasmine rice or brown rice and stir fry some shredded cabbage, scallions, sliced garlic-carrots-celery, add a handful of frozen peas; toss with rice and drizzle with soy sauce or Braggs Aminos.

We have a long standing tradition of eating out at our favorite Chinese place after church on sundays. It started with a reward after playing a couple rounds of frisbee golf but we're no longer playing frisbee golf, just going out to eat. : \ We always bring home leftovers for sunday nite and usually monday noon.
