I made this tonight for the family & it was awesome & SO easy (pretty frugal, too). I even tasted a couple of bites (despite my normal vegan-ness) and it was truly wonderful. So easy a kid could make it (which is to say, a kid SLIGHTLY older than mine).

I especially like the blogger's concept of making these as "ministry meals" for a neighbor in need, or for the local homeless shelter. (she has several other easy recipes to prepare for the freezer, too)

This does look good and easy! I showed my dd and she said.. nope! lol!
However, I've found that once I make something she'll usually try it.

I like your idea of adding spinach, too.

This is exactly how my mom makes manicotti. I don't really like it much, myself.

Ah, well - I love it, but I really cannot eat all that cheese given the cardiovascular disease that runs in my family.

It is super easy to make, & super yummy (at least to me) tho!

I'm going to try it. It's not healthy, lol! but for an every once in a while meal, it sounds too easy to pass up.

This meal with a nice salad sounds good. If we end up not liking it, it's cheap so not much harm done. :)

This is "Cheesefare" week for us Orthodox - which means it is the ONE week of the year when our cuisine is cheese & egg based. So - it was definitely a "once in a while meal" for us : )

Not healthy? It seems plenty healthy to me! It's just pasta, cheese, and marinara sauce.
