Steam broccoli and puree in blender.
Heat 2 c chicken broth.
Add broccoli and 1/2 c heavy cream to chicken broth.

I added salt and pepper and we have some shredded cheese to top it with. It has good broccoli flavor but it is very liquidy. I don't think I got enuf broccoli in there for the amount of chicken broth I used. Still, I love simple ingredient lists!

Later this week, probably for dinner, I'm going to make another broccoli soup. It's recipe is from Panera. I have Kaiser rolls to use for soup bowls. I think the kids will enjoy it.

Hmmm this might be worth trying. I have all the ingredients and it sounds so simple to make!

I make the same thing - with veggie broth/bouillon & without the cream! It is very nice with garlic toast points. ( I leave some broccoli in big pieces, and some blended for more of a texture contrast). And, yes, I use A LOT of broccoli in mine. It's very tasty : )

Made the Panera broccoli cheese soup last night and served in little bread bowls. Nobody could eat all that bread and, altho' they enjoyed it, I think it was quite a waste. The soup, OTOH, is definitely more on the "comfort food" level than the previous broccoli soup! Not something I'd want to have all the time.

Oh, my goodness! I used to have a "Vegetable & Cheese Soup" recipe, that, if I recall correctly, used an entire block of Velveeta! It turned out delicious, and the kids all loved it - but I'm still doing penance for eating that junk
20-some-odd years ago! ; )

I used to eat that stuff when I was little and loved it. Shudder.
