This is one of those things that I've heard of often, but don't know what it is.
I always thought of it as a Chinese dish!

I have found a lot of stir-fry recipes....they are all basically the same. I may try that, or just toss some in with some other stir fry veggies. There are also some soup recipes that include bok choy as well as some salad and cole slaw-type dishes. Apparently it is good raw, steamed, stir-fried, or cooked in soups. If I have ever had it, I don't remember!!! But I have never met a green leafy veggie that I haven't liked! Allrecipes.com had some yummy-sounding ideas.

our family's favorite Chinese cabbage recipe, from Time Life Foods of the World cookbooks, Chinese Cooking:

Stir fried spiced cabbage
1 pound Chinese cabbage
2 tblsp sugar
2 tblsp white vinegar
1 tblsp soysauce
1 tsp salt
1/4 tsp cayenne pepper
1 tblsp peanut oil or flavorless cooking oil

Trim top leaves and root ends of cabbage, separate stalks and wash them. Cut each stalk, leaves and all into 1-1 1/2 inch pieces. In a small bowl combine sugar, vinegar, soysauce, salt and cayenne pepper. Have oil within reach.

Set a wok or large frypan over high heat for 30 seconds, pour in oil and swirl and heat for another 30 seconds then turn down heat to moderate. Immediately add cabbage and stir fry for 2-3 minutes. Make sure all the cabbage is coated with the oil. Remove pan from heat and stir in the soysauce mixture, transfer cabbage to a serving platter.
