Oh, that's funny LauraJean! I didn't see your post when I posted!

Thank you for the cooking tips! I have always been scared to mess with squash because I didn't know what to do with them and didn't want to cook them wrong, so I'm glad we received these squashes so I can try out your guys' suggestions and maybe gain confidence in cooking them.

I love any kind of yellow squash. My dad always had a gardem and grew the crookneck squash. We - me, my mom and my sis- would spend the summer harvesting squash (and other veggies) and put them in the freezer or can them.

Yellow squash with onions was always my favorite, though.

You can do a search and find lots of good recipes. I like them raw in salads and I love them in stir-fry dishes.

These are so good. LIke Laurajean, we stir fry chunks of squash with onions. You don't want to them mushy, though.
IF they are mushy from overcooking, we top them with a bit of american cheese!
There is an awesome squash casserole you can make with them and cheese that we love here in the south.

And don't forget Fried Squash! Slice it, soakmit in some ice water for about 5/10 minutes; dredge them in cornmeal; fry in a skillet or electric skillet that has a light coating of vegetable oil. Turn once to brown both sides.

Since moving to the south, I've found out that EVERYTHING can be fried, lol! Even oreos!

Lisa, have you seen fried pickles? I would have never tried them if a friend had not ordered them when I was with her and made me try it. They were delicious!

I love fried squash and fried okra. It's more work than I usually have time to devote to dinner though!

We had a few squash from the garden today. I sauteed in some butter with onion and some green beans we picked. Dh likes squash fried down in an iron skillet with onions and garlic, no batter on it, kind of sauteed way down. That's how his granny cooked it for him lol. If the squash is a little too big or too seedy, I scrape out the seeds before cooking. I don't like a lot of seeds in it myself.

You guys are making me want some squash now!
PS: My mom used to make us fried squash blooms. She'd pick them early in the morning and put them in ice cold water until dinner. Then she'd dry them well.. dip them in a flour and cornmeal mixture, and fry.

:D I had a relative make those for me last time we were in Cyprus - I'd never had them before (tho I had heard about them). They're amazing! (she used a flour & beer batter - no cornmeal)
