Dh came home with a bag of veggies from a friend, out of their home garden. We used the tomatoes and onions last night in our cobb salad. :)

But I don't know what to do with the two yellow squashes. My mom isn't really sure, either, since neither of us cook with them. What's the best way to make it, how long does it take to cook, and what is it good with? Can you make it in a stir fry?

What do you mean by "Yellow Squash?" - do you mean the ones with the thin yellow skin that look a lot like Zucchini? They're called Summer Squash.

Or do you mean the kind with a hard outer rind & inside flesh like a Pumpkin (there is a huge variety of those - Acorn, Butternut, etc)

Given the time of year, I'm guessing that you have Summer Squash. They are very versatile. They can be eaten any way you'd eat Zucchini - and they taste a lot like Zucchini. You can slice & eat them raw, marinate them, put them in salads - including pasta salads, add them to a stir-fry, roast them, boil them, put them in Zucchini Bread, etc.

My favorite way is probably grilling: Slice them lengthwise about as thick as you'd make slice & bake cookies. Spray or brush them with oil. Add garlic salt & herbs (like Italian herbs, or Oregano & Basil, for example) and Grill them either outdoors over charcoal or indoor in a George Foreman type grill.

I also like them this way:
Zucchini or Summer Squash Saute
Cut in matchsticks
2 Zucchini or Summer Squash
2 carrots
Saute
1 T oil
1 tsp fresh garlic
Add veggies, sauté till done
Add & Cook briefly to blend flavors, serve
½ tsp thyme
½ tsp basil
Salt & Pepper

You make summer squash sound really good. I might have to buy some and try those things you mentioned. I don't think I've ever had it.

Well, I don't think those really stir-fry well. They take too long to cook for that, and they tend to fall apart & be a little crumbly.

The flesh of "Winter Squash" (the kind with the hard outer rind) can generally be used anywhere you'd use Pumpkin - or sometimes where you'd use Sweet Potatoes. Pies, breads, etc. It is also good cubed & cooked in a curry sauce.

This is how I like to prep the flesh for adding to a curry, pureeing for bread or pie, or just for eating:

Acorn squash in microwave
Pierce thru 4 times with a skewer
Microwave 8-10 minutes, till soft to touch
Cut in half, remove seeds, Season or fill as desired
Cook covered 5-6 minutes more if needed

Once it is cooked, the traditional way to serve it is with Butter & Brown sugar (then cook halves a little longer to caramelize sugars) - then you just scoop it out by the spoonful to eat it (much like cantaloupe, but softer).

You can also fill it with an herbed rice stuffing.

We didn't even know what to call them at first. We were like gourds? Squash?

those are Yellow Crookneck squash. You use them just like you would use yellow summer squash. the rinds will soften when cooked.

One of the easiest ways is ti slice them faily thin (not see-through thin!) and slice up -or chop- an onoion (preferably a Vidalia or Texas Sweet!) add just a little bit of water Nd steam on the stovetop or microwave. Drain. add a little bit of butter and salt and pepper to taste. Yum! his is one of my favorites!

there are also a TON of recipes for squash casseroles "out there" using these squash as well as the summer variety.

I found it! It's a yellow Crookneck squash and it's most often used as a summer squash!
