DOH! (to quote the non-Greek Homer ; ) Just realized I forgot my link http://www.aeb.org/foodservice-professi ... ns=1,2,3,4The Egg Board has hundreds of ideas. And, don't forget "Goldenrod Eggs" over toast- it was a childhood favorite of mine. Hardcook eggs - chop the whites and mix them with medium white sauce - pour over toast. Sieve the yolks over the top (hence the "goldenrod" name)

On the channel that has for storing up food, you coat the eggs in oil and they keep for a year. no refrigeration.

Well, we've got no eggs at the moment, chickens are molting. They most likely will take a break til Jan they say. Must mean God doesnt want us to eat eggs in the winter unless we've preserved 'em. Makes me wonder. Those pilgrims must've had pumpkin mush not pie for their Thanksgiving.

Funny - our Christmas Fast (when eggs are forbidden) starts in a couple of weeks, and lasts till nearly January. I have heard that Chickens also Molt around the time of Great Lent (when eggs are again forbidden).
And, yes - the Pilgrims didn't eat pumkin pie : ) I've heard about some sort of milky substance cooked inside a roasted pumpkin half (no pie at all!)
