My chickens are laying like crazy! I need more egg customers. :0) Meanwhile, do you have some ideas for using lots of eggs?

You might try pickled eggs if you've never done that.

I might even search for ways to "preserve" eggs and do some experiments! :)

Wish you could share with us! :) We are only getting two eggs a day.......not enough for my family yet. Our young ones should be laying in a month or so.

Egg Salad!

Boiled eggs (they make great protein snacks or a quick breakfast)

Deviled eggs

Mayonnaise - 2 eggs, 2 Tbs lemon juice, 1/2 tsp salt, 1/2 tsp ground mustard. Combine all of these ingredients in a blender until well mixed. While blender is running, slowly - in a steady stream - add 1 1/4 cup vegetable oil. Blend until thickened.

Make your favorite bread, pancakes, muffins, cake, etc and use extra eggs in the recipe (omit some of the other liquid)

Have omelets for ANY meal!
Use your homemade mayo to make your deviled eggs and egg salad!

I like to make a quiche, but instead of cooking it in a pie pan, I put it in muffin cups, bake, and then freeze....that way we have a quick breakfast/lunch!

French Toast!!!!

I also should mention that we have an excess of milk as well, so recipes that coming the two would be even better!

You can actually freeze eggs....break them into .....maybe a 1/2 gallon milk jug. Fill about half way - or as many as you would need for several recipes. When you need to use them, thaw - and they will pour out whole... one at a time. That way, when your chickens aren't being so profitable, you can still make some cakes and omelets!

You can also freeze milk. But if I freeze it, I just use it in soups and recipes.

Maple custard

1 cup of milk
4 eggs
1/2 cup of real maple syrup
pinch of salt

Preheat oven to 375. Butter 4 custard cups. Put a shallow baking pan in the oven and fill halfway with hot water.

Beat the milk and eggs and salt together in a bowl. Add the maple syrup. Place filled cups in the water bath in the oven. Bake for 20min, or until custard is barely set.

This should provide a bit of inspiration : )

And, this is a recipe of my Grandmother

Cheese Pudding

Butter and cube
4 slices bread
Layer in greased casserole with
1 c cubed cheddar
Combine and pour over
1 ½ c milk
3 eggs
½ tsp salt
Pinch pepper
½ tsp mustard

(May be prepared in advance and left overnight in fridge before baking)
Bake 325 degrees, 45-60 minutes

And a nice build-your-own-breakfast-casserole-for-the-freezer
