Post subject:  Do you save your bacon drippings?

And if so, do you refrigerate, or leave out covered, on counter?

I think my grandmas used to leave hers out.

Also, if you do save them, how do you use them for cooking?

In what dishes?

UMM - no, can't say that I do ; )

Mom used to - and left it out on the counter. She didn't cook often, but she used it for frying eggs. I believe I've also seen it used for fried onions & potatoes.

I don't cook bacon too often at all, but my ds loves bacon so I do cook it sometimes for him.
I love to keep the drippings for later, however, I'm so scatterbrained that I often end up dumping them in the drain before realizing it! That's NOT good at all for my pipes.

IF (big if) I remember to, I will but them in a coffee cup and put aluminum foil over the top and just leave it on the counter. If I don't use it after a while, I'll have my ds dump it out back for the cats. (We live in the boonies and the cats LOVE it, lol)

We love bacon but I try to only use it as a flavoring - like one strip crumbled into something for both of us. I happen to have some bacon that needed cooked so I put it in the potluck dish I took yesterday and cooked up the rest to put in broccoli soup today. That will be the end of it til dh brings more home.

We save the grease in a small bowl and will put a spoonful or two on the pet's food when we want to give them a treat. Or now, with the cat outside in the single digit weather, I try to give him fat regulary and that's usually the bacon grease we have saved up. I don't use it in my cooking but I think dh will if he's frying. I suppose it could go bad - rancid - if it were out long enuf but I can't remember it ever happening.

Actually, Pork Fat is a remarkably effective preservative. My European friends tell me that before the advent of refrigeration, prepared pork was submersed in a layer of pork fat to preserve it for the winter (in cool temperatures) and while the top layer might spoil, apparently the fat created an anerobic environment for the meat.
