Mexican Rice 1 cup cooked brown rice 2 tbsp butter ½ cup chopped red onion ¼ lb shredded cheddar cheese or sharp cheddar cheese 1 jalapeno pepper chopped Cook the onion in the butter till soft. Add the brown rice and jalapeno pepper. Top with the cheese and cover till cheese is melted and rice is hot. |
