Unfortunately, the law says that milk products that are not commercially pasteurized and homogenized are "for pet consumption only." You can sell it like that and then people can do with it as they please. We also have cheese that we sell "for pet consumption only." (Who would feed their pet cheese???) The laws in this country are CRAZY.

I feed my cat cheese. He's so finicky so sometimes I entice him with cheese or milk. He also LOVES sour cream and onion chips. ;-)

Here are 2 yogurt recipes from Kysa and Darla. I especially love Kysa's recipe because I love Greek Yogurt. I just made a lovely batch of this the other day. I like to start mine in the evening (get the temperature of the milk up to 185) and put my crock in the oven overnight. I turn the oven on just til it's warm, turn the light on, put the crock in and leave it overnight. Yum!

Kysa’s Crock-Pot Yogurt

Ingredients/tools

Whole Milk
4-6 oz plain yogurt
Large Crockpot
Cooking thermometer
Large Colander
Cheesecloth

Turn crock pot on low and let preheat for 20 minutes. While crockpot is pre-heating, scald milk in the microwave (5 min for 4 cups)Fill crock-pot to just below the lid with the scalded milk. Turn crock-pot OFF.

Check the temperature periodically, and when it reaches 120 F, whisk in about ½ cup plain Greek yogurt. Cover with the glass lid and a folded towel (or several towels) and leave for about 12 hours. About every 2 hours, turn crock-pot on low for just 2-4 minutes – just enough to keep warm but not cook, keeping it between 110-120 F.

After about 12 hours, whey should begin to form. Line colander with cheesecloth and strain, then refrigerate.

DARLA’s Yogurt
Pour 1 gallon of whole milk in your crock pot.
Turn onto low for 2-1/2 hours. Do not remove the lid.
Unplug the crackpot and leave to sit for 3 hours. Do not remove the lid.
After 3 hours, take out about 2 cups of warm milk (replace lid ASAP) and put in bowl. Add 1 cup yogurt and 1 packet gelatin, and stir/whisk well. Add back in to the crockpot milk, and replace lid.
Do not plug it in again, but surround the crock pot with bath towels. Let sit overnight, or 4-8 hours.
When done, immediately save 1 cup for your next batch (keep this set aside in the fridge).

Martha, I found this blog post today, and remembered your question from way back. I don't know if you still have lots of milk, but with the holidays not too far away, perhaps you could process some of your excess this way and use it for things like fudge : )
