Made this last night and it was easy and delicious! It received 4 thumbs up from our house and it's rare that we all love something. The only thing I changed is I left out the celery and added carrots and corn. But you could do a lot with this recipe, use different meat or leave it out altogether, add extra things, etc. It says it's 8 servings, but it was only 4 servings (normal size bowls), so I will double it next time for leftovers because we wanted more!

Interesting recipe. I usually make my potato soup with homemade chicken broth, or no broth at all. I like corn in it, too. I got rid of a lot of zucchini when the kids were growing up. I added pureed cooked zucchini and carrots to the potato soup and it gave it nice little orange and green flecks and the kids didnt know they were eating them.

My dd has fallen in love with potato soup. She's asked me about making it. I'll give her this recipe. (We'll leave out the ham, though.)
