Post subject:  Minestrone


1 can pinto beans drained
1 can great northern or cannellini beans drained
2 cups vegetable or beef broth
2 cans stewed or diced tomatoes
1 onion, chopped
4 celery stalks, chopped
1 can carrots, chopped
¼ head napa or green cabbage, chopped
1 cup frozen corn
2 garlic cloves, minced
4 ounces whole wheat pasta shells, elbow macaroni, or other small pasta
2 tablespoons chopped fresh parsley

Drain the beans and put them in a large soup pot.  Add the water and bring to a boil over medium-high heat.  Stir in the tomatoes, onion, celery, carrots, cabbage, and garlic.  Cover and cook, stirring occasionally, for about 30 minutes, until the beans and vegetables are tender.  Stir in the pasta and cook until tender, about 10 minutes.  Stir in the parsley.  Serve hot.

I know, Briva, me too!! I wish my dc would eat this kind of thing. I'd have it almost every day in the winter.
I used to never like soups, but now I am finding so many that I love!!
