Post subject:  World Weeknight Dinners

I thought this was a really fun article - families from 18 countries eating a "typical" weeknight meal. With nearly all of them, I had the impression it was a little extra for the reporters (SOMEBODY out there must eat sandwiches, cereal, or mac n cheese from a box on the typical weeknight!) But, still, fun.

I also liked that some of the families were portrayed as religious in the article.

We're having Greek Chickpea Stew (Revythia) and Fresh Homemade Baguettes. And maybe a salad if I get ambitious.

Friday night I was enroute to TX for my youngest dd's wedding (and trying to miss the storm headed our way). I ate dinner at a Vietnamese noodle place. Veggies and rice noodles. At the wedding I skipped the brisket but had the trimmings; potato salad, beans, and made a sandwich with pickles and onions, lots of carrots and broccoli no one else was eating. Dessert was fruit salad. I did good!

Back home in FL.

Congratulations on your youngest DD's marriage! That's wonderful news! I'd love to hear all about it : )

For dinner last night - I was trying to use up leftovers & had a time crunch before Church. I had a homemade baguette in the freezer, and some shredded ranch chicken adapted from this recipe

I toasted the baguette and put the chicken over, and topped that with pizza sauce & Fat Free Mozarella & Parmesan & Microwaved. It was a BIG hit! (I made a toaster oven personal pizza for me : )
