I've done precious few turkeys in my life - Mom was an expert at them (even tho she generally did very other cooking thru the year.)
One year she wasn't well enuf to do it, and my Sister & I (both adults at the time!) attempted to do it. We couldn't figure out which side went up. I decided that their feet should go down, as they run that way ; ) It just so happened to make a very tender, juicy turkey - since the juices ran DOWN to the breast (which can be the dry part). I've since seen "experts" recommend doing it that way. Three other times I've done one - I kept a smoker running that my BIL started one year. Another year I got a Butterball precooked smoked turkey (a BIG hit!) and a third time I did a breast in the Crock pot - guests said it turned out well : )
Of course, I haven't EATEN turkey in more than 20 years now - so perhaps folks just flatter me when they say it worked out okay ; )
Or, they figure it tastes better than cooking it themselves!!!
I have my mashed taters, cran salad and the cornbread for the dressing made tonight. I need to read thru the green bean casserole i'm making. I have plenty of time in the morning to finish up. I'm SO THANKFUL to be off work for a day!!! Then back to it on friday.
