When you use tapioca starch in a cooked sauce (like my Asian Stir Fry), it gives an oil-type "mouth-feel" It seems to me that in bread it causes a slightly different sort of moistness in the bread.

Flavor? can't tell the difference : )

ETA: buying a loaf seems like a stroke of genius on your week off ; )
