 Post subject: To refrigerate or not....

Who here keeps butter out of the refrigerator? In the refrigerator? What about eggs? I recently saw a friend of mine, whose daughter is in Scotland for an internship, take a picture at the local grocery store. Their eggs were on the shelf and not in the frigeration section.

My Mom always kept the current stick of butter on the table - and she didn't finish it in one or two days, either. It really doesn't need refrigeration.

Although we did refrigerate our eggs, Mom had worked on an egg farm when she was young, and assured me that eggs in their natural state could stay unrefrigerated for quite a while. BUT - American egg companies wash them to make them more attractive for sale, and that removes part of the natural protective covering. So, she didn't recommend leaving out modern American eggs.

I keep a stick out and the rest in, especially in the summer. (I find cold butter useless except on dinner rolls.) ;)

I try to put most of our eggs in the fridge during the warmer months. Mostly they're out on the counter, tho'. Technically, you shouldn't keep washed eggs out of the fridge but i don't pay attention to which eggs i have. I keep them all on the counter most of the time. Haven't opened a bad one yet. (And i've been doing it a few years now.) I learned this from a friend that lived in Hungary for a year and lived with us. :)

I don't leave them out. I do remember my grandma leaving her butter out, but she lived on a farm so it was all natural, not the processed butter like today.
Ditto on the eggs, unwashed keep longer.

If I'm planning on baking, I will take them out and let them sit for a few hours to overnight.
