I have to send an email to my college professor and I'm stressing over greetings. I've always used "Dear" and "Sincerely" for formal letters/emails, but now that's considered "old fashioned" and "too formal". But I don't know what else I would say that would sound right and be respectful. What do you think?

I'd write Dear Mr.... and Sincerely. Old fashioned is not neccessarily wrong.

If they are "Dr." then, use..."Dr. Smith." Or Professor Smith if you are not sure if they have their doctorate or not.

Go with formal and traditional. If you're too formal, it's easy for the prof to say "Oh, please, don't call me Dr. Smith, call me Bob (or Mary)" but if it's too INFORMAL - it's very awkward to have a prof tell you, "Don't call me Mary (or Bob) please, call me Dr. Smith"

Overly respectful is not likely too offend : )
